Easy, Low Carb, and Diabetic-Friendly Recipe 

This Edamame Pasta recipe is easy, quick, low carb and the chicken piccata makes this dish a great source of high protein meal and diabetic friendly. 

It takes 3-5 minutes to boil the edamame pasta, and while you wait for that pasta to boil, you can prepare your Chicken Piccata on the side. This recipe is simple yet versatile, you can add your own twist to it and make this dish YOUR signature dish for any weekdays or weekend.

EDAMAME PASTA

Mild in taste, and high in plant protein and fiber makes me recommend this edamame pasta over regular pasta. After trying making this dish, even my picky husband is ON BOARD and agrees that this dish is flavorful! More importantly, it is low in Carbs, so it’s great if you have diabetes and want to try an alternative to regular pasta. 

Keep in mind that Edamame has moderate phosphorus and potassium. Please check serving size and food labels if you are limiting your potassium and phosphorus.

Edamame Pasta Taste and Texture

The edamame spaghetti texture is similar to a whole wheat thin noodle. It has that chewiness you look for in a pasta without any watery, sogginess you find on zucchini noodles or squash noodles. The edamame spaghetti has a delicate, nutty flavor. It goes well with earthy mushroom or peanut sauce.

What You Will Need

6-8 pieces of thin slices chicken breast

1 Box of Edamame Spaghetti Pasta

½ cup all purpose flour (or you can do meat tenderizers)

Mrs Dash seasoning

3-4 sliced mushrooms

2 cloves of garlics

1 teaspoon of capers

1 lemon sliced

½ cup of white wine

½ cup of vegetable stock

A pinch of salt pepper to taste

A pinch of parsley for garnish

How long does it take to boil Edamame Spaghetti? It takes 3-5 minutes

Are they substitutes for white wine? Yes, instead of ½ cup veggie broth, you can use 1 cup veggie broth with 2 tablespoons of white vinegar.

How healthy is edamame pasta? Per 100 grams of serving, it has 3 times more protein, 3 times more fiber and 3 times LOWER net carbs. 

Can you freeze edamame pasta? You can freeze them once you boil them and let them cool completely. It will be good for 1 month due to the delicate texture but IT’S BEST TO ENJOY WARM.

Equipment

  • 1 Non stick cooking pan
  • 1 Medium Boil Pan
  • 1 chopping knife
  • 1 whisk
  • 1 chopping board

Ingredients
  

  • 8 pieces of thin slices chicken breast
  • ½ cup all purpose flour or you can do meat tenderizers
  • 1 tbsp Mrs Dash seasoning
  • 4 slices mushrooms
  • 2 cloves garlics
  • 1 teaspoon capers
  • 1 lemon sliced
  • ½ cup white wine
  • ½ cup vegetable stock
  • A pinch of salt pepper to taste
  • A pinch of parsley for garnish
  • 1 edamame pasta

Instructions
 

  • PASTA: Prepare according to the box direction (boil 3-5 minutes). Strain and set aside.
  • Chicken Piccata:
  • Season chicken with Mrs Dash seasoning and a pinch of salt and pepper
  • Dusted with light flour or meat tenderizer
  • Pan Fry them on medium heat with olive oil, flipping after 2-3 minutes on each side. Set aside.
  • On the same pan, sauteed garlic, mushroom, and capers for 2 minutes
  • Add your wine and vegetables stock, let it simmer and reduce (about 2-3 minutes)
  • Insert your lemon slices
  • Add the chicken back to the sauce.
  • SERVED: Pasta over plate and top it off with Chicken Piccata. Sprinkle with parsley as garnish.
