When consumed in high amounts, more than 1/3rd cup a day, for example, it may cause constipation.

Ingredients
- 1 lb watermelon seeded and cut into chunks
- 1 oz Feta Cheese or Ricotta Cheese
- 1 ¾ oz watermelon seeds as desired
- ½ bunch garlic finely chopped
- ½ bunch fresh cilantro leaves chopped
- ¼ cup balsamic vinegar
- 1 tsp of Extra Virgin Olive Oil
- 1 tsp sesame oil
Instructions
- Combine the watermelon, seeds, salt, garlic , and cilantro in a large mixing bowl.
- Whisk the balsamic vinegar, sesame oil, and fish sauce together in a small bowl.
- Pour over the watermelon salad mixture and gently toss to coat evenly.
- Sprinkle with Feta Cheese or Cottage Cheese.
- Chill in refrigerator 1 hour to serve chilled.
